- Preheat the oven to 200°C. Peel the butternut squash and cut it into 2-cm cubes. Arrange the cubes on a baking sheet with a drizzle of olive oil, a pinch of cinnamon, salt, and pepper. Bake for 20 minutes until tender and lightly caramelized.
- Rinse the basmati rice, then cook it in a large pot of boiling salted water for about 10 minutes. Drain.
- Make a slit in the rounded side of the fresh chestnuts, place them on a baking sheet, and bake them for 20 minutes along with the squash. Peel them while they're still warm.
- Wash the apple and cut it into thin wedges, without peeling it.
- For the dressing, whisk the Dijon mustard with the apple cider vinegar and light brown sugar until the sugar is completely dissolved. Gradually drizzle in the olive oil while whisking to emulsify. Season with salt and pepper.
- In a nonstick skillet, sauté the ACCRO herb-flavored vegetable strips with a drizzle of olive oil until they are golden brown. Keep warm.
- Divide the warm basmati rice between two bowls. Arrange the roasted squash, chestnuts, and apple wedges evenly on top. Add the ACCRO vegetable strips while they’re still warm. Drizzle with vinaigrette. Sprinkle with crushed hazelnuts and chopped parsley.
